a country like Japan, surrounded by ocean, sea creatures are the main source of
food for Japanese people, especially Tuna, which is considered to be one of the
greatest treasures of the ocean.
Sushi, a staple food of japan requires Tuna as one of
the main ingredients and is consumed by a lot of people. Kura Sushi, a Japanese
chain of sushi restaurants decided to develop an AI application to analyze the
quality of Tuna as it requires years of expertise (sometimes even 35 years) and
is one of the best skills that support culinary culture revolving around this
fish. The skill of the Tuna Master decides whether to use the fish or not. As
it requires years of expertise, and the artisanal skill is disappearing, they
decided to develop an app that can examine tuna precisely like an expert.

Dentsu, a Japanese advertising firm developed the application Tuna Scope by collaborating with Kara Sushi restaurant to bring back the significance of Tuna Mastering. It is said that the quality of Tuna can be examined just by looking. They added more than 4000 images of tuna tail which an expert would take at least ten years into the AI machine learning. It examines the tuna based on four methods that experts do as well.
The app was examined at the Yaizu Fish processing
facility in Japan. They examined the application by taking hundreds of pictures
of Tuna by simultaneously comparing the results of the applications and the
results of the Tuna Master experts. The results were shocking. The app matched
the expert at a rate of 75-85% which is more than enough for a Tuna examining.
The AI is developed in such a way that the more and more the application is
used, it upgrades the amazing quality of results. The hotel chain owner used
this application to find great quality Tuna and marketed it has AI Tuna. More
200 plates of Tuna are sold every day in the hotel chain. The developer wants
this application to be used by fish markets across the globe to create more
fascinating tuna examining and to meet the global standards.
